Fijian Lovo
The Fijian Lovo cooking & feasts sometimes take days to prepare. Lovo is the traditional Fijian and South Pacific style of cooking. Lovo food is steamed on white hot stones covered with banana and coconut leaves.
Food cooked in the lovo is very tasty, tender because it is slow cooked and all of the moisture is retained in the food. Palm fronds are collected and woven into baskets into which the food wrapped in banana leaves will be placed before it is put into the oven. The meat and dalo is often prepared in the sweet cream of the coconut. The ovens lined with palm fronds are built in the ground lined with hot stones. The lovo is then covered and the food is cooked all afternoon.
By dinnertime, the feast is ready and so are the guests.
The lovo consists of cooked seafood, meat and vegetables and are accompanied by fresh fruits, salads, tropical drinks, desert and of course, Fijian music.

Marinated chicken in coconut leaf basket
Sweet potato
Palusami : Taro leaves filled with coconut cream, diced onions and tomato wrapped in aluminum foil.
Kokoda (Raw Fish marinated in lemon and limes)
Walu is very white meat fish shinned and filleted then diced and soaked in lemon for three hours then the lemon is poured off and coconut cream, diced onion and tomato is added.
Curry Lolo Fish
The fish is finely filleted fried in curry spices then baked in the oven with coconut cream, sliced onion and tomato.
Vegetable Curry
Fresh vegetable curry served with hot rice.
Salad
Coleslaw with fresh fruit pieces mixed in.
Dessert
Fresh coconut cream pie
Also a chance to drink lots of kava for free, during the traditional kava ceremony.
Costs
Book early due to very limited space. If you have not tried a lovo, you have not completed your Fijian holiday.
