Tamarind Ginger Pickle
Ingredients
1 pound ginger
6-8 fresh green chillies
1-2 large tamarinds, or 2 ounces of commercial tamarind
paste
½ teaspoon mustard seed
1 teaspoon turmeric powder
2 tablespoons Jaggery powdered
Salt to taste
Oil to fry in
Method
- Clean
and grate ginger, squeeze in paper towel to remove excess water.
- Dice
chillies.
- Heat
oil and fry the mustard seed for 1-2 minutes.
- Add
the ginger and chilli and turmeric powder, cook for 1 minute.
- Add
tamarind to the ginger-chilli mixture.
- Mix
well.
- Add
salt to taste.
- Let
it cook and become thicker.
- Before
removing it from the heat add jaggery and mix well.
