Tamarind Ginger Pickle

Ingredients

1 pound ginger

6-8 fresh green chillies

1-2 large tamarinds, or 2 ounces of commercial tamarind paste

½ teaspoon mustard seed

1 teaspoon turmeric powder

2 tablespoons Jaggery powdered

Salt to taste

Oil to fry in

Method

  1. Clean and grate ginger, squeeze in paper towel to remove excess water.
  2. Dice chillies.
  3. Heat oil and fry the mustard seed for 1-2 minutes.
  4. Add the ginger and chilli and turmeric powder, cook for 1 minute.
  5. Add tamarind to the ginger-chilli mixture.
  6. Mix well.
  7. Add salt to taste.
  8. Let it cook and become thicker.
  9. Before removing it from the heat add jaggery and mix well.
