Potato Curry

Method

1 pound potatoes

1 cup milk (Dairy or Coconut)

2 tablespoons mustard

2 tablespoons curry powder

1 teaspoons turmeric powder

1 onion, Diced

1 green pepper, Diced

Salt to taste

Pinch lemon grass

Method 

  1. Boil potatoes and remove skin.
  2. Cut potatoes into cubes, about 1/2 inch.
  3. Dice onions and green pepper.
  4. Add potato cubes, mustard, curry powder, turmeric, salt and milk and bring to boil.
  5. Then add oil to a different pan at medium heat.
  6. Temper onions and green pepper for a minute.
  7. Add the contents of the first pot and bring to boil again.
