Mixed Vegetable Curry

 

Ingredients

3 tablespoons of oil or ghee

1 large yellow onion, thinly sliced

2 small potatoes, cut into cubes

8 ounces of cauliflower, broken into flowerets

2 large carrots, cut into cubes

¼ pound green beans, chopped

2-4 medium tomatoes, peeled, chopped

1-teaspoon ground cumin

1-teaspoon chilli powder

2-teaspoons ground coriander

1-teaspoon turmeric

1-¼ cups hot vegetable stock

4 tablespoon Cilantro, chopped

¼ teaspoon Paprika

 

Method

  1. Heat oil in a large skillet over medium heat.
  2. Fry onions for 5 minutes until softened.
  3. Stir in cumin, chilli powder, coriander and turmeric, cook for another 2 minutes.
  4. Add potatoes, cauliflower, green beans and carrots, tossing them in the spices and onions until fully coated.
  5. Add tomatoes and stock and cover.
  6. Bring to a boil.  Reduce heat to low.
  7. Cover & cook gently for about 10 minutes, or until the vegetables are tender.
  8. Mix in the cilantro & sprinkle with the paprika before serving.
