Mango (Green) Chutney

Ingredients

2 pounds green mangoes

½ teaspoon Salt

1 pound brown sugar

1 pint of white malt vinegar

1 teaspoon Chilli powder

1 tablespoon Garlic paste

1 tablespoon Ginger, grated

4 Bay leaves

 Method

  1. Peel mangoes and remove stone and cut into small pieces then soak in a plastic or glass bowl with salted cold water and drain just before using.
  2. Mix all the ingredients together in a heavy saucepan.
  3. Cooking uncovered with a high heat and wait until the mixture begins to boil.
  4. Turn the heat to medium and continue to cook for 15 minutes stirring occasionally with a wooden spoon.
  5. Turn the flame to low and continue to cook and stir until the ingredients begin to thicken.
  6. Remove from the heat and put the chutney in a clean warm jar, while it is still hot, and cover.
