Eggplant, Fried Curried

 Ingredients

1 medium eggplant

1 cup all purpose flour

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon turmeric

2 teaspoons curry powder

1 cup milk (coconut or dairy)

1 egg

¼ cup oil, or ghee

Method

  1. Wash eggplant, dry after washing.
  2. Beat remaining ingredients in a bowl with rotary beater until smooth and free of lumps.
  3. Heat oil, or ghee to medium high in large thick pan.
  4. Cut eggplant into ¼ inch thick slices.
  5. Dip each slice into batter, letting excess drip back into bowl, do not wipe off excess.
  6. Fry in hot oil, or ghee until golden brown, turn only once.
  7. Drain.
