Eggplant,
Fried Curried
Ingredients
1 medium eggplant
1 cup all purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon turmeric
2 teaspoons curry powder
1 cup milk (coconut or dairy)
1 egg
¼ cup oil, or ghee
Method
- Wash
eggplant, dry after washing.
- Beat
remaining ingredients in a bowl with rotary beater until smooth and free of
lumps.
- Heat
oil, or ghee to medium high in large thick pan.
- Cut
eggplant into ¼ inch thick slices.
- Dip
each slice into batter, letting excess drip back into bowl, do not wipe off
excess.
- Fry
in hot oil, or ghee until golden brown, turn only once.
- Drain.
