Eggplant Curry

Ingredients

1-pound Eggplant

1 ounce oil, or ghee

1 ounce milk (Coconut or Dairy)

2 teaspoon Curry powder

1 teaspoon Red pepper powder

Pinch of salt

Pinch sugar

2 teaspoons vinegar (or lime)

One onion

 Method

  1. Wash eggplant and cut into small pieces.
  2. Add oil to frying pan, and heat to boiling point.
  3. Add eggplant and fry until a light brown color (golden color).
  4. Allow to drain on paper towel to remove excess oil.
  5. Add the fried eggplant, milk, curry powder, red pepper, salt, sugar, and vinegar to a pot and cook for 3 minutes.
