Eggplant Curry
Ingredients
1-pound Eggplant
1 ounce oil, or ghee
1 ounce milk (Coconut or Dairy)
2 teaspoon Curry powder
1 teaspoon Red pepper powder
Pinch of salt
Pinch sugar
2 teaspoons vinegar (or lime)
One onion
Method
- Wash
eggplant and cut into small pieces.
- Add
oil to frying pan, and heat to boiling point.
- Add
eggplant and fry until a light brown color (golden color).
- Allow
to drain on paper towel to remove excess oil.
- Add
the fried eggplant, milk, curry powder, red pepper, salt, sugar, and vinegar
to a pot and cook for 3 minutes.
