Chicken Tikka

Ingredients

2 pounds, boneless chicken, either breasts or thighs, cut into 1 inch pieces

1 teaspoon ginger, grated

1 teaspoon garlic paste

1 teaspoon chili powder

¼ teaspoon  turmeric

1 teaspoon salt

2/3 cup natural (plain) yogurt

4 tablespoon lemon juice

1 tablespoon chopped fresh coriander (cilantro)

1 tablespoon vegetable oil or ghee

Garnish

1 small onion, cut into rings

Lime wedges

Mixed salad

Fresh coriander (cilantro)

Method

  1. In a medium bowl, mix together the chicken pieces, ginger, garlic, chili powder, turmeric, salt, yogurt, lemon juice and fresh coriander (cilantro) and leave to marinate for at least 2 hours.
  2. Place on a grill (broiler) tray or in a flameproof dish lined with foil and baste with the oil.
  3. Preheat the grill to medium.  Grill (broil) the chicken for 15-20 minutes until cooked, turning and basting 2-3 times.
  4. Serve with the garnish ingredients.
