Black Bean and
Sausage Soup
Ingredients
1 can (14-16 ounce) black beans, drained and divided
¼ cup, oil (olive or other)
1-cup onions, diced
1 or 2 medium tomatoes, diced
2 Teaspoons Ground Coriander
2 garlic cloves, minced
1 beer (12-ounce), room temperature
1 cup water, divided into ½ cups
½ teaspoon chilli powder, ground
½ teaspoon cumin, ground
¼ teaspoon salt
¼ teaspoon hot sauce
¼ teaspoon pepper
3-4 ounces turkey sausage, kielbasa or other, diced
Method
- Place
½ of the beans, the tomato and ½ cup of water to a food processor or
blender and puree’ until smooth.
- Dice
the onions into small pieces.
- Mince
the garlic into small pieces.
- Put
1/8 cup of vegetable oil into large saucepan.
- Add
onions to saucepan and brown them.
- When
the onions are lightly browned add garlic.
- Cook
for an additional minute.
- Add
chilli power, cumin, hot sauce, salt and pepper.
- Cook
for an additional minute.
- Add
sausage (or other ground meat) and cook 3 more minutes
- Add
bean/tomato puree, whole beans; along with remain water and all the beer.
- Cover,
reduce heat and simmer for 5-10 minutes
Variation
Ground beef,
ground turkey, or ground pork can be substituted for sausage.
