Black Bean and Sausage Soup 

 

 Ingredients 

1 can (14-16 ounce) black beans, drained and divided

¼ cup, oil (olive or other)

1-cup onions, diced

1 or 2 medium tomatoes, diced

2 Teaspoons Ground Coriander

2 garlic cloves, minced

1 beer (12-ounce), room temperature

1 cup water, divided into ½ cups

½ teaspoon chilli powder, ground

½ teaspoon cumin, ground

¼ teaspoon salt

¼ teaspoon hot sauce

¼ teaspoon pepper

3-4 ounces turkey sausage, kielbasa or other, diced

 

    Method

  1. Place ½ of the beans, the tomato and ½ cup of water to a food processor or blender and puree’ until smooth.
  2. Dice the onions into small pieces.
  3. Mince the garlic into small pieces.
  4. Put 1/8 cup of vegetable oil into large saucepan.
  5. Add onions to saucepan and brown them.
  6. When the onions are lightly browned add garlic.
  7. Cook for an additional minute.
  8. Add chilli power, cumin, hot sauce, salt and pepper.
  9. Cook for an additional minute.
  10. Add sausage (or other ground meat) and cook 3 more minutes
  11. Add bean/tomato puree, whole beans; along with remain water and all the beer.
  12. Cover, reduce heat and simmer for 5-10 minutes

  Variation 

Ground beef, ground turkey, or ground pork can be substituted for sausage.
